Investigation of the papaya seed oil properties for development into edible oil
Abstract:
The nutritional quality of vegetable oil is suitable for consumption. The papaya seed (Carica
papaya L.) is also a source of lipids. The objective of this research was to study the properties of papaya
seed oils for development into edible oil. This study was carried out on various seed oils from
5 varieties (unripe and ripe) of papaya seeds (Kaeg-dum, Kaeg-naun, Kam-mam, Hawaii and Holland).
This study found that total lipids of papaya seeds were 25.14 and 34.65%. Fatty acid compositions
of various papaya seed oils were relatively monounsaturated (approximately 75.04 and 77.88%), with
oleic acid (C18:1) being the dominant fatty acid. Total phenolic contents of papaya seed oils calculated
as gallic acid equivalents (GAE) ranged between 259.33 and 342.11 mg/kg. Physicochemical properties
of papaya seed oils were: saponification values 180.22 and 189.43 mg KOH/g, unsaponification values
0.53 and 0.86%, iodine values 72.47 and 74.87 g/100g, acid values 0.51 and 2.24 mg KOH/g and
peroxide values 0.02 and 0.08 meq/Kg. Benzyl isothiocyanate in papaya seeds ranged between 3,515.71
and 8,860.00 ppm.
This research showed that papaya seed is an excellent source of lipids, especially monounsaturated
fatty acid (oleic acid). It contains phenolic compounds that have antioxidant activity. These compounds
are beneficial for health. Thus, papaya seed oil can be developed into edible oil. However, the removal
of benzyl isothiocyanate in papaya seed oil should be the subject of further study.
